Exploring the role of flavour chemists in the food and drink industry

Chemistry has an important role to play in food manufacturing and this article highlights how chemists identify the molecules that give foods their distinctive flavours and how they can use this information to create new flavours, for example a vegan ‘bacon flavour’.
